Epic Veggie Burger with Dairy-Free Boursin & Avocado Cheese Spread

This veggie burger is exactly what it’s called—epic! A perfectly cooked veggie burger with a fresh avocado and cheesy Boursin tasty mixture and served with warm caramelized onions, spinach and sliced tomato. Like we said—epic.

Preparation

Equipment:

Stove, Fryer

For Avocado Boursin Cheese:
  1. In a bowl, smash avocado.

  2. Add Boursin, cilantro, lime juice and salt.

  3. Blend together well.

  4. Cover and refrigerate.

For Caramelized Onions:
  1. In a large saute pan, melt 1 ounce of the butter over medium heat.

  2. Add onions and season with half the salt and half the pepper.

  3. Toss onions frequently, once or twice a minute.

  4. Cook for 10 minutes until they are golden brown.

For Veggie Burger:
  1. Cook burger for 3 minutes.

  2. Flip and cook for additional 2 minutes.

  3. Toast the bun.

  4. Layer the bottom bun with the spinach and tomato, then the burger.

  5. Top with the warm onions, 1 ounce of the Avocado Boursin cheese and bun.

For Fries:
  1. Heat the oil to 350°.

  2. Drop the fries into a basket and with salt.

  3. Serve immediately with a ramekin of Avocado Boursin cheese.

    lb yellow onions, 1/4-inch slices

  • 2

    oz unsalted butter, soft or vegan spread

  • 1

    tsp salt

  • 1/4

    tsp ground black pepper

For Sweet Potato Fries:
  • 6

    oz frozen sweet potato fries

  • 1/4

    tsp salt

  • 1

    oz avocado boursin cheese

  • Vegetable oil, as needed
