Shakshuka Breakfast Skillet with Boursin

Looking for an easy breakfast idea with eggs? Bring a little heat to your guest’s morning with this delicious take on a classic Israeli breakfast. This shakshuka recipe includes eggs poached in a sauce of tomatoes and Middle Eastern spices – topped with crumbles of savory Boursin® Garlic & Herbs cheese.

Preparation

Equipment:

Cast Iron Pan

For Breakfast Skillet:
  1. Heat cast iron pan over medium heat.

  2. Add 2 tbsp olive oil and onions, cook until onions are translucent.

  3. Add minced garlic & spices combine thoroughly and cook until fragrant, 1 - 3 minutes.

  4. Add sliced yellow & orange peppers, sauté for 3 minutes.

  5. Add fire roasted tomatoes, tomato paste, and broth. Combine thoroughly and reduce heat. Simmer for 5 minutes.

  6. Using a ladle or large spoon create little pockets in the mixture for the eggs, crack one egg into each crater, top with cracked fresh pepper and salt. Cover pan until eggs are cooked to your liking.

  7. While eggs are cooking, wash and finely chop cilantro and parsley.

  8. Slice avocado.

  9. Crumble Boursin Cheese gently using a fork.

  10. Slice and lightly toast baguette.

  11. Remove cast iron from heat.

  12. Evenly disperse avocado slices throughout the pan.

  13. Generously sprinkle fresh herbs and crumbled Boursin onto the dish.

  14. Add additional fresh cracked salt & pepper to taste.

  15. Optional: Add jalapeño slices

  16. Drizzle remaining 1 tbsp olive oil on freshly toasted baguette slices.

  17. Serve hot with baguette slices.
