Elevated Spring Vegetable Toast Vegetarian
If toast is a blank canvas, here’s your chance to make a masterpiece. Perfect as an easy to execute brunch dish, this vegetarian recipe brings together the rich, creamy taste of Boursin® Garlic & Fine Herbs cheese with radishes, ribbons of carrots and baby greens to create a work of art.

For Spring Vegetable Toast:

Toast the bread.

Cut the carrot lengthwise into thin ribbons.

Cut the radishes into thin rounds.

Slice the lime in half, juice 1/2 and cut remaining 1/2 into very thin slices.

Tie each carrot ribbon into a knot.

Toss carrots, radish and baby greens with lime juice and set aside.

Spread toast with Boursin® Cheese, then layer carrots, radish, lime slices and baby greens on top.

Top with fresh thyme and serve.
