6 BBQ Sauce
18 Pounds Thick Cut French Fries, Skin On
9 Pounds Carne Asada
3 Cups Canned Mild Green Chilies, Diced

For Fries:
  1. Fry French fries to order, as needed for service.
  2. Mound 6 ounces of cooked French fries in a serving basket.
To Make 1 Order:
  1. Evenly top fries with 3 tablespoons of Merkts Sharp Cheddar Cheese (soft chunks) then add a 2-tablespoon drizzle of bbq sauce.
  2. Evenly top the fries with 3 ounces of carne asada and 1 tablespoon of green chilies.
